  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or chocolate chips

Method
 

🔪 Instructions:
  1. Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan or line with parchment paper.
  2. In a large bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
  3. In a separate bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  4. Add dry ingredients to wet ingredients and stir gently until just combined. Do not overmix.
  5. Fold in nuts or chocolate chips if using.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, until a toothpick inserted into the center comes out clean.
  8. Cool in the pan 10 minutes, then transfer to a rack to cool completely before slicing.
