🔪 Instructions:
- Preheat oven to 350°F (175°C). Grease a 9×5 loaf pan or line with parchment paper.
- In a large bowl, whisk flour, baking soda, baking powder, salt, cinnamon, and pumpkin pie spice.
- In a separate bowl, mix pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
- Add dry ingredients to wet ingredients and stir gently until just combined. Do not overmix.
- Fold in nuts or chocolate chips if using.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, until a toothpick inserted into the center comes out clean.
- Cool in the pan 10 minutes, then transfer to a rack to cool completely before slicing.
