- In a bowl combine warm water, honey, and yeast. Let sit 3–5 minutes.
- Add flour and salt. Mix until a dough forms.
- Rest dough 10–15 minutes.
- Knead for 8–10 minutes until smooth.
- Cover and let rise 45–60 minutes.
- Divide dough into 8 pieces and shape into bagels.
- Rest shaped bagels 15–20 minutes.
- Preheat oven to 425°F.
- Bring water and honey to a boil.
- Boil bagels 1 minute per side.
- Add toppings.
- Bake 20–22 minutes until golden brown.
Notes
Freshly milled flour absorbs more liquid than store flour. Add extra water if needed to achieve a soft but firm dough.
